Coconut Chicken

This is one of my favorite asian recipe !!!

Ingredients:

300 g chicken breast
½ red bell pepper
1 onion
3 slices fresh pineapple
300 ml coconut milk
1 tablespoon soy sauce
½ teaspoon of curry
½ teaspoon of powdered ginger
½ teaspoon turmeric
1 tablespoon honey

Preparation

Peel and finely chop the onion.
Chop the bell pepper and the pineapple. Cut the chicken into cubes.
In a skillet, heat some vegetable oil over medium heat.
Add the chicken. Once the chicken is cooked, place in a plate and set aside.
In the same skillet, add the onion and the bell pepper and sauté for about 2 minutes.
Add all the honey, soy sauce and all the spices and sauté for 1 minute more.
Add the pineapple and the coconut milk and cook for 5 minutes in order to reduce the sauce.
Finally place the chicken back in the skillet and cook for few minutes.
Serve with rice.
